LOW FAT MANGO AND LIME FROZEN YOGHURT

As the summer sets in and the sweltering heat come upon us, it is time to once again indulge in our favourite refreshments. Unfortunately, unless it's a glass of iced water you're thinking of, there's always some calories involved. Our local supermarkets usually have special offers for ice creams making it all the more tempting to load up with our cooling but calorific creamy treats.

As much as I can, I make homemade, lower calorie version ice creams. Now that fruits are also in season, we are spoiled for choice of flavours. This frozen treat is made with yoghurt, milk and mango puree. Lime adds an accent flavour that goes so well with the sweetness of the mango. It is so creamy that you wouldn't think it's not ice cream. Skimp on calories but not taste. Indulge without guilt.

Ingredients:

1 1/2 c. greek style fat free yoghurt
1 1/2 c. mango purée (I used tinned Alphonso mango purée)
1/2 c. light condensed milk
1/2 cup skimmed milk powder
1/4 c. sugar

Instructions:

Freeze the ice cream canister overnight and refrigerate all the ice cream ingredients.

Whisk all the ingredients together before pouring into the the ice cream machine. Churn until thick and fluffy, then transfer into a plastic box before freezing.

They may also be frozen in ice lolly molds. I served it here with more mango slices.
