CHEESE ICE CREAM


"Sorbetes! Sorbetes!" The ice cream man heralds his arrival with a shout and the ringing of a hand bell. Sorbetes is the Tagalog word for ice cream. Children playing in the streets, all hot and bothered, would run and swarm around him upon hearing this magic word. Such is a daily afternoon scene in every street in the Philippines. 


We don't have ice cream vans playing melodious tunes. We have decorated ice cream carts pushed by ambulant vendors. The front of the cart holds several canisters, well insulated from the scorching sun, containing ice cream. The back has containers for the cones and the ice cream scoops.

There are no fancy flavours. Just classic old time favourites: vanilla, chocolate, ube (purple yam) and of course my favourite, cheese. Yes, cheese as in cheddar cheese. Filipinos love cheese on everything and is added to both savoury and sweet food, even ice cream. The ice cream is sweet and creamy with bits of real cheese. I have made my version here with two types of cheddar and cream cheese. How cheesy can that be? 



Ingredients:


330 mls. single cream
1 c. condensed milk
1 c. grated mild cheddar cheese
1/2 c. cream cheese
3 tbsps. sugar
1/4 tsp. vanilla extract
1/2 c. coarsely grated mature cheddar cheese


Method:


Mix all of the ingredients together, except for the mature cheddar. churn in an ice cream maker. When the mixture is thick and fluffy and ready for the freezer, fold in the grated mature (or sharp) cheddar. Transfer to a plastic container and freeze.

  3. The days of traveling ice cream here seems long past. Perhaps because I am not in a neighborhood with lots of kids?! I have had ice cream with cream cheese but there seems to be a lot of recipes popping up with different kinds of cheese-I may try this-stunning pictures!

  6. Now I've heard it all. Cheese ice cream. I love hearing of different cultures around the world. There are foods and things we never experience by staying closed to only one culture.

    My daughter lived in Italy and was amazed at all the different Gelato flavors.

  10. I love this! I agree with Tiffany (previous poster) I bet this would be amazing on apple pie! I remember the ice-cream vendors in the Philippines, but not the flavor....it's been a LONG time!

  14. Cream cheese ice cream...with more added cheese! Love the flavors in this frozen treat, Adora, and that ice cream cart brings back memories of our own ice cream vendors here (albeit with less colorful carts).

  24. Queso ice cream was one of my favorite when I was growing up. I would always buy 3 scoops from Mamang Sorbetero: 2 scoops queso and 1 scoop langka. Sarap!!!
    Your version looks so tempting, Adora! Definitely a must try!

    Too bad I don't have an ice cream maker otherwise, I'll sure have a great taste of this! Maybe I can try making this using the 'keep-stirring-every-hr' method. ;)

  26. I've never encountered cheese ice cream, but I'm sure I would love it! And I think it would complement apple pie nicely - there are those that like it with cheddar and those that like it with ice cream, this way you get both!
